  • 1 loaf of day-old bread (sourdough or whole grain works great)
  • 1/4 cup olive oil or vegan butter (for richness)
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 large carrots, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth (low-sodium)
  • 1/4 cup fresh parsley, chopped
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1/2 cup dried cranberries (optional, for a sweet touch)
  • 1/2 cup chopped nuts (pecans or walnuts work well, optional for a bit of crunch)
  • 1/4 cup vegan Parmesan cheese (optional, for a cheesy flavor)

  • Prepare the Bread:
    Start by cutting the bread into cubes. If the bread isn’t stale, you can spread the cubes on a baking sheet and toast them in a 350°F oven for 10-15 minutes until slightly crispy. This adds the perfect texture to your stuffing!
  • Sauté the Veggies:
    In a large skillet, heat the olive oil or vegan butter over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5-7 minutes until the vegetables are tender. Then, add the garlic and cook for another 1-2 minutes, until fragrant.
  • Mix Everything Together:
    In a large bowl, combine the bread cubes with the sautéed vegetables, herbs (sage, thyme, rosemary), and the vegetable broth. Stir well to combine. Add salt and pepper to taste. If you’re using cranberries, nuts, or vegan Parmesan, stir those in as well for an extra layer of flavor.
  • Bake the Stuffing:
    Preheat the oven to 350°F. Transfer the stuffing mixture to a greased baking dish, cover it with foil, and bake for about 30 minutes. Then, remove the foil and bake for another 10-15 minutes until the top is golden brown and crispy.
  • Serve and Enjoy:
    Once it’s done, take it out of the oven and let it cool for a few minutes before serving. This stuffing is the perfect side dish to complement any holiday meal, and it’s sure to impress!
